Chocolate Marshmallow No Bake Cookies

Chocolate Marshmallow No Bake Cookies are a dairy or pareve dessert that take only minutes to assemble, roll up and place in the freezer. Once frozen, rolls can be cut into pieces and served as needed, revealing a colorful, luscious interior. The miniature marshmallows are enticing for children and especially for adults that remember this retro recipe from their youth. Thanks to Cheryl for suggesting this fabulous marshmallow recipe.
Ingredients:
- 4 oz. unsweetened chocolate
- 4 tsp. butter or pareve margarine
- 1 tsp. vanilla
- 1 cup sifted icing sugar
- 1 egg
- 1/2 pkg. colored miniature marshmallows
- 1/2 cup finely chopped nuts*
- shredded coconut (about 1/2 cup)
- *if peanut allergic, replace nuts with rice crispies
- Wax Paper - to roll up mixture
In a saucepan, melt chocolate over low heat and stir. Once melted, remove from heat and stir in butter or margarine, vanilla, icing sugar and egg. Stir until all ingredients are blended and smooth. You can also use the microwave to melt the chocolate, using a microwave safe container to heat chocolate in 30 second intervals, stirring, until melted - then remove and stir in ingredients as listed above.
Once the chocolate mixture is blended, pour into a large bowl and then add marshmallows and nuts. Use a large spoon or spatula to coat marshmallows with chocolate.
Place long sheet of parchment or wax paper (not tin foil) on working surface and sprinkle it with coconut. Using a spoon or wet hands, transfer chocolate marshmallow mixture onto paper in its length and roll into a long log between 2-3 inches in diameter, picking up the coconut as you roll. If you are crazy about coconut, sprinkle more on the mixture as you roll it.
Form a few rolls from the single long one you have created, keeping your hands wet to ease the process. Freeze marshmallow dessert in 3-4 rolls, each wrapped up in log/roll form in its own piece of wax paper. Rolls may be a bit lumpy.
Freeze until firm. Remove and while frozen, slice into pieces 1/8-1/4" thick, as needed. The 'cookies' will thaw quickly - serve cold. Refrigerate any leftovers.
