Nicoise Salad - Traditional Recipe

<< Nicoise Salad is a classic salad recipe named for Nice, France. This flavorful, colorful salad often blends a variety of salty, briny ingredients such as anchovies, olives, capers and of course, tuna. To offset the salty flavors, potatoes and hard boiled eggs are included in addition to a full-flavored salad dressing. The recipe below comes from an authoritative source: Larousse – Best Recipes Ever. I have included the recipe for Red Wine Vinaigrette in addition to a second vinaigrette salad dressing recipe (not from Larousse) made with garlic and cheese.

Classic Nicoise Salad:

  • 1 lb. small potatoes or grelots, cooked in their skins, then peeled and sliced or diced into bite-sized pieces (for nice presentation, make thin slices)
  • 3/4 lb. cooked green beans, drained (preferably ‘blanched’ and placed in cold water for maximum color)
  • 2 large ripe tomatoes, peeled, deseeded and thinly sliced into wedges
  • 8 green olives, pitted and sliced
  • 8 ripe olives, pitted and sliced (your favorite variety of dark olive would be fine)
  • 1 shallot, peeled and finely diced
  • 1 can anchovies (1 ¾ - 2 oz.), rinsed and drained
  • 2 tbsp. capers
  • Optional:
  • 1 can of tuna (about 7 oz.), drained and flaked (if you cannot eat tuna, substitute another type of canned fish, smoked salmon or your favorite cooked fish)
  • A couple of hard-boiled eggs, peeled, cut into eighths
  • Sliced zucchini, lightly cooked
Red Wine Vinaigrette Dressing:
  • 3 tbsp. red wine vinegar
  • Salt, freshly ground Black Pepper
  • Pinch of sugar
  • 5 tbsp. olive oil
Gently mix together all salad ingredients in a large bowl, then make the dressing. Whisk the vinegar with the salt, pepper and sugar, then whisk in the oil, a little at a time. Pour dressing over the salad, cover and chill, for 30 minutes before serving. Note: Looks gorgeous served on a white salad plate, the various vegetables and ingredients evenly distributed.

Cheese Garlic Vinaigrette - another delicious salad dressing recipe!

  • ¼ cup wine vinegar
  • 2 tbsp. lemon juice
  • 1-2 cloves garlic, mined
  • 1 tbsp. Dijon mustard
  • Salt and Black Pepper, to taste
  • 1 cup olive oil
  • ½ cup grated Parmesan cheese
In a small bowl, whisk together vinegar, lemon juice, garlic, mustard, salt and pepper. Slowly whisk in the olive oil, a bit at a time. Stir in cheese and whisk again.

Nicoise Salad serves: 4-6
