Lentil Rice Patties
Lentil Rice Patties make a nutritious meal for anyone that is looking for a healthy, lowfat recipe filled with fibre and
protein. As I try
to include more chickpeas (garbanzo beans) and other non-animal based sources of protein in my diet, these easy patties
fit the bill. Serve them as an appetizer or light meal with a side salad.
Ingredients for Lentil Rice Patties:
- 2 cups vegetable broth
- 3/4 cup water
- 1 medium chopped onion
- 1/3 cup uncooked brown rice
- 1/2 tsp. crushed red pepper
- 3 cloves garlic, minced
- 3/4 cup brown lentils, rinsed and drained
- 1 15 oz. can garbanzo beans, rinsed and drained
- 1 cup regular rolled oats
- 2 egg whites, lightly beaten (if desired, use 1 whole egg)
- 1/4 cup chopped fresh basil or 2 tsp. dried basil
- 1 tbsp. Worcestershire sauce
- 1/4 tsp. salt
- 1/2 cup chopped walnuts or almonds, toasted
- Cooking spray or vegetable oil
Combine broth, water, onion, rice, red pepper and garlic in a medium saucepan. Bring to a boil and then reduce heat.
Simmer, covered, for 20 minutes. Stir in lentils. Cover pot and simmer for another 30 minutes, or until rice and lentils are tender.
Remove from heat.
Add garbanzo beans to the saucepan. Mash mixture with potato masher and then stir in oats. Allow mixture to stand for 5 minutes.
Add all remaining ingredients, except for nuts, to the saucepan and stir to combine. Fold in the nuts. Using a 1/2 cup measure, form patties - you will flatten them later.
Coat a large skillet with cooking spray or 1 tbsp. vegetable oil. Heat to medium high and place a few patties on the hot pan. Flatten each patty to 1/2" thickness
using the back of a spatula. Cook a few patties at a time, about 3-4 minutes per side, until golden brown. Add more cooking spray or oil,
if needed. Serve immediately or transfer to a baking sheet and keep warm in a 300 degree F oven.
Place cooked patty on a slice of toasted whole grain bread, roll or baguette together with lettuce, tomatoes, yogurt, mustard or any other flavorful toppings that you like.
