Lemon Pound Cake

Lemon Pound Cake is a moist and delicious cake recipe that is quite simple to prepare - it tastes like you worked all day long!

Ingredients:

  • 1 package of cream cheese (250g), room temperature
  • ¾ cup margarine or butter
  • 1 ½ cups sugar
  • 1 ½ tsp. vanilla
  • 4 eggs
  • 1 tbsp. grated lemon rind
  • 2 ¼ cups flour, sifted
  • 1 ½ tsp. baking powder
  • Confectioners’ sugar – to dust top of cake
Preheat oven to 325 degrees F. Generously grease a 9” tube pan.

In a large bowl, beat cream cheese, margarine (or butter), sugar and vanilla until smooth. Add eggs, one at a time, mixing well, at low speed. Add lemon rind.

In a separate bowl, sift flour and baking powder. Add dry ingredients to cheese mixture, beating at low speed.

Pour batter into prepared tube pan.

Bake for 60-70 minutes or until toothpick inserted in centre comes out clean.

Cool for 20 minutes and invert cake onto serving plate. When completely cooled, dust the top of cake with icing sugar.
