Lemon Apricot Marinade

<< Lemon Apricot Marinade makes a tangy dressing for chicken that is sweet and flavorful - handy recipe for the holidays.


Ingredients:

  • 1/2 cup apricot preserves
  • 3 tbsp. fresh lemon juice
  • 1 tsp. freshly ground black pepper
  • 1 tbsp. grated lemon peel
  • 1/4 tsp. salt
Note: the finished product measures about ¾ cup - feel free to double or triple the recipe, as needed.

Simply mix all ingredients together in a bowl.

This marinade can also be used to brush on salmon or halibut. If roasting a chicken, brush chicken with marinade prior to baking. While chicken roasts, continue to baste lightly with dressing (you want to avoid burning of the jam at the bottom of your roaster) retaining a bit for the end, to pour over the cooking chicken.
