Cheese Latke Recipe

<< At Chanukah, a good Cheese Latke recipe can come in very handy. Cheese pancakes served with applesauce and sour cream are delicious to serve at holidays or at any get-together with family and friends. There are two recipes below to consider: the first recipe recommends that eggs are separated and that stiffly beaten whites are folded into the batter; the second recipe uses whole eggs and includes sour cream as an ingredient. Read these recipes over and choose one for the upcoming holiday.


Recipe #1:

  • 1/2 cup soft cream cheese (4 oz.)
  • 2 eggs; separated
  • 1/2 cup flour
  • 1 tablespoon sugar
  • 1 cup Cottage Cheese
  • 1/2 teaspoon salt
  • pinch of cinnamon, to taste
  • Oil or butter, for frying
Mix cream cheese with egg yolks, then add sugar and cottage cheese. Add flour slowly and mix well. Beat egg whites until stiff, and fold into cheese mixture. Heat oil in pan and drop mixture in by tablespoonfuls. Fry until brown, and flip. Serve with sour cream or apple sauce. Makes 30 latkes. May be frozen. Source of this recipe: www.chabad.org.

Recipe #2:

  • 1/2 lb. or 8 oz. package of dry cottage or cream cheese
  • ½ cup sour cream
  • 3 eggs, beaten
  • ½ tsp. salt
  • 1 tbsp. sugar, or to taste
  • ¾ cup sifted all-purpose flour
  • 1/8 tsp. baking powder, blended into the flour
  • 2 tbsp. butter or oil, for frying
Beat cottage cheese and sour cream until well blended; add beaten eggs, salt and sugar, followed by the sifted flour blended with the baking powder. Beat until smooth. If batter is too stiff, add a tablespoon or two of milk. Melt butter or add oil in skillet and drop in batter using a tablespoon. Cook until golden brown on each side. Serves: 4 (feel free to double the recipe)
