Imitation Crabcakes

Imitation Crabcakes are made with fish found in the kosher section of the supermarket. The fish used in this product is a whitefish that has been partially colored to look like "crabmeat". It produces delicious 'crabcakes' that can be prepared for meals or as an appetizer recipe. Feel free to double the recipe - add your favorite seasonings to tailor the flavor to your preferences.

Ingredients:

  • 1 lb. imitation crabmeat (found in the kosher section)
  • 2 tbsp. celery, chopped
  • 2 tbsp. onion, diced or dried flakes
  • 2 tbsp. fresh chopped or dried parsley
  • 1 tbsp. fresh chopped dill
  • 1 tbsp. Dijon mustard
  • 1 tbsp. lemon juice
  • 2 tsp. Worcestershire sauce
  • 1/2 cup mayonnaise
  • 1/2 cup breadcrumbs (Japanese Panko are great in this recipe)
  • 1 large egg, lightly beaten
  • Salt and black pepper, to taste
  • 2-3 tbsp. oil, for frying
In a large bowl, combine imitation crabmeat, celery, onion, parsley, mustard, lemon juice, and Worcestershire sauce. Add mayonnaise, breadcrumbs, egg and mix together until all ingredients are blended. Season with salt and pepper.

Shape into 4-6 patties. Make mini-cakes using a tablespoon if serving as an appetizer. Place patties on plate and chill for an hour before cooking.

Add oil to frypan and heat to medium high. Add crabcakes and cook until golden brown on both sides. If you make only four patties with the recipe, it will take 3-4 minutes per side. Mini-cakes will cook more quickly.

Garnish imitation crabcakes with lemon or lime wedges.
