Ice Cream Torte

Ice Cream Torte is remarkably easy to make once you have assembled the ingredients. This easy dessert recipe will please kids of all ages.
Ingredients for Ice Cream Torte:
- 4 cups granola mix (preferably, without fruit)
- 6 tbsp. butter
- 2 tbsp. brown sugar
- 2 pints ice cream (4 cups)(choose your favorite flavor - a rich ice cream that is loaded with chocolate, caramel, nuts or other goodies is recommended)
- Ice cream sauce (hot fudge, chocolate, caramel, butterscotch or your favorite flavor)
- Fresh berries, nuts, sprinkles or other ice cream toppings, if desired
Line bottom of 9" spingform pan with waxed paper.
Optional: spray sides of pan lightly with cooking spray to ensure easy removal later on.
Chop granola in food processor until it reaches consistency of a very coarse meal. The 4 cups of unchopped mix will turn into about 3 cups, once finely chopped.
Pour 2 1/2 cups chopped granola into a medium bowl. Leave the remaining granola aside.
Melt butter in a small bowl. Stir in the brown sugar. Add butter/brown mixture to the granola in the medium bowl. Stir together. Press mixture into the bottom of the prepared pan.
Place in freezer for 15 minutes, or until firmly set. At this time, you can remove the ice cream from the freezer so that it softens up a bit.
Remove pan from freezer. Spoon ice cream over crust. Cover your hand with a small baggy and press ice cream firmly over the crust. Sprinkle remaining granola evenly over the ice cream.
Return torte to the freezer for at least one hour.
When ready to serve, run a knife around the outside edge of the torte. Release springform sides - slide the torte off of the waxed paper onto a flat serving plate or cutting surface. Heat fudge sauce and drizzle over each plate, if desired or use a cold ice cream sauce. Top with a wedge of cake and drizzle more sauce over top. Add toppings, as desired. You can also serve the cake as a whole on a platter and cut slices at the table.
