Herb Rubbed Chicken

Herb Rubbed Chicken is a delectable recipe that contains a mouth-watering assortment of savory ingredients. The result is chicken with 'character' - the mustard, garlic and herbs are a winning taste combination - not to mention the aroma throughout the house!
Ingredients:
- 2 chickens, cut-up, with skin
- 1/2 cup fresh basil
- 1/2 cup fresh parsley
- 2 tbsp. fresh rosemary or thyme
- 2 tbsp. old style mustard (grainy)
- 2 garlic cloves, minced
- 2 tbsp. olive oil
- 2 tbsp. lemon juice
- 1/2 tsp. salt
- 1/8 tsp. pepper
Preheat oven to 350 degrees F.
Pulse all ingredients, except chicken, in a food processor until a coarse paste
is formed. Do not overprocess.
Rub the herb mixture all over chicken pieces, coating them thoroughly.
Refrigerate chicken for 4-5 hours or overnight.
Bake chicken uncovered for 60-70 minutes. Check for doneness and if skin is not
browned, broil for a minute or two.
