Gluten Free Cookies - Chocolate Crackle

<< Chocolate Gluten Free Cookies are appropriate for anyone looking for a delicious no-flour treat. If you have celiac disease, read over the recipe below and remove any hidden sources of gluten that you may recognize - I doubt that these ingredients will give you any trouble. The cookies bake up chocolatey and delicious as crackle cookies.


Ingredients:

  • 1/2 cup ground almonds
  • 1/2 cup unsweetened Dutch-processed cocoa powder
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1/4 cup unsalted butter or margarine, at room temperature
  • 2/3 cup brown sugar
  • 1 egg
  • 1/2 tsp. vanilla (if desired, replace with almond flavoring or a bit of your favorite liqueur)
  • 112g or about 4 oz. (4 squares) of chopped, melted dark chocolate, cooled
  • 1/4 cup granulated sugar
  • 1/4 cup icing or Confectioner's sugar
In a small bowl, whisk together almonds, cocoa, baking powder and salt.

Melt chocolate on low heat on stove or in microwave and let cool.

In a large bowl, beat butter and brown sugar using electric mixer, until smooth - about 3 minutes. Beat in egg and vanilla. Add cooled off chocolate, stirring slowly. Fold in almond mixture. Cover bowl with plastic wrap and refrigerate until dough becomes firm enough to roll out (10-15 minutes).

Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or lightly spray/grease. Position oven racks in top and bottom thirds of oven.

Place granulated and icing sugars in 2 separate small bowls. Use a tablespoon to scoop pieces of dough and roll into balls. Dip tablespoon-sized balls into granulated sugar first, then into icing sugar. Place coated balls onto prepared pans, one inch apart.

Bake on oven racks and switch baking sheets halfway through cooking (6-7 minutes) rotating sheets for even baking. Remove cookies after about 12-14 minutes, once they 'crack'. Remove baking sheets to a rack and cool for two minutes.

Cookies may seem undercooked - they will continue to bake as they cool off. After a few minutes, remove from pans to cool completely.

Store in an airtight container at room temperature or freeze.
