Frozen Lemon Mousse Pie

Frozen Lemon Mousse Pie is a delectable dessert that is made ahead of time and served straight from the freezer to the table. You will need a large springform pan because this recipe makes a large mousse - appropriate for a crowd.
Ingredients for Frozen Lemon Mousse Pie:
- 1 container Nutriwhip, pareve
- 8 whole eggs
- 2/3 cup lemon juice (use fresh, if possible)
- 2 cups sugar
- Pareve pie crust (ex: Mother’s brand graham type or chocolate cookie crust)
Prepare a large springform pan by coating bottom and sides with cooking spray or pareve margarine.
Break up the packaged pie crust into crumbs and pat it down at bottom of springform pan.
In a large bowl, begin to beat Nutriwhip. Add the 8 eggs, one at a time and continue to ‘whip’. Slowly add the lemon juice while beating followed by the sugar, a bit at a time.
Pour the mousse mixture into the prepared springform pan that has been coated with pie crust at the bottom. Cover with plastic wrap and place in freezer right away. Keep frozen for at least one day.
To serve, do not thaw - remove from freezer just prior to serving and remove mousse from springform. Serve immediately.
