Feta Pie

Feta Pie is an easy brunch recipe that will be popular with cheese-lovers and vegetarians. This dish contains 3 types of cheese, all low in fat.

Ingredients:

  • 1 ready to bake pie shell
  • 1 cup low fat cottage cheese
  • 1/2 cup light cream cheese, at room temperature
  • 1 tbsp. butter or margarine, softened
  • 3 eggs
  • 1 tbsp. oregano, basil or dill
  • 1/8 tsp. ground black pepper
  • 1 can of sockeye salmon, drained, bones and skin removed (approx. 5-7 oz.)
  • 2 green onions, chopped
  • ½ cup feta cheese, crumbled
Preheat oven to 375 F.

In food processor or blender, process cottage cheese until smooth. Add cream cheese, butter or margarine and process. Blend in eggs, herbs and pepper, processing until the mixture is creamy.

By hand, stir in salmon, green onions and feta cheese. Pour mixture into pie crust that has been set into a pie plate or other baking dish.

Bake 35-40 minutes or until the centre is set.

Cool for 10 minutes and slice into this delectable cheese pie.
