Easy Mousse

Easy Mousse is a delicious recipe that can be prepared as a dairy dish or if desired, as a pareve
dessert. You can make this thick, luscious treat ahead of time and simply spoon it into parfait glasses with
fresh fruit garnish.
Ingredients:
- 1 cup boiling water
- 1 pkg. raspberry or strawberry gelatin (4 servings)
- 2 ripe bananas (1 cup pureed)
- 1 cup raspberry or strawberry yogurt*
- 2 cups frozen non-dairy whipped topping, thawed
- 1 cup frozen strawberries, raspberries or
mixed berries, thawed, sliced and drained
*Note: For a pareve mousse, you can substitute a nondairy, pareve product made with tofu or soy. If necessary, add 1 tbsp. white vinegar to a cup of vanilla pareve soymilk.
Stir boiling water and powdered gelatin in medium bowl and let it sit for
a couple of minutes until completely dissolved.
Place gelatin in freezer about 20-30 minutes until slightly thickened.
Puree bananas in blender or food processor until smooth, enough to make one cup.
Combine yogurt and pureed bananas in large bowl. Stir thickened gelatin into this yogurt-banana mixture.
Refrigerate until slightly thickened.
Fold whipped topping into refrigerated gelatin mixture. Gently stir in thawed frozen
fruit. Stir mixture until well blended.
Transfer mousse into a serving bowl and refrigerate for
3-4 hours allowing it to harden before serving. Spoon the chilled mousse into parfait glasses or Stuffed Chocolate Shells.
Garnish with fresh fruit and serve.
