Easy Macaroons

Easy Macaroons are fast, simple and delicious. I just made a batch - from beginnning to end it took less than 30 minutes. Feel free to double the recipe - these traditional Passover cookies freeze very well.
Ingredients for Easy Macaroons:
- 1-1/3 cups flaked coconut
- 1/3 cup white granulated sugar
- 3 tbsp. cake meal
- Pinch of salt
- 3 egg whites
- up to 1/2 tsp. almond extract (I use less because I find almond extract quite potent)
- whole almonds, walnuts, or pecans, to top each cookie
Preheat oven to 325°F. Lightly grease a large jelly roll pan (I use one that is 12" x 17").
Mix coconut, sugar, cake meal and salt in medium bowl. Stir in egg whites and almond extract, mixing until all ingredients are blended.
Using a teaspoon, drop dough onto prepared pan, leaving an inch or two between macaroons. Press a nut into the centre of each macaroon.
Bake for 20 minutes on top or centre rack of oven, until macaroons are golden brown. Remove from oven and take cookies off of baking sheet - cool on wire rack. Serve or store in airtight container and freeze.
Makes: about 14-16 macaroons
