Easy Almond Bars

Easy Almond Bars can be prepared and baked in less than hour. No matzo or cake meal – dairy or pareve depending on whether you use butter or margarine. Great snack or dessert for Passover.
Ingredients:
- 6 tablespoons margarine or unsalted butter
- 2 ounces unsweetened chocolate
- 1 cup sugar
- 2 eggs, lightly beaten
- 1 teaspoon Passover vanilla extract or orange juice
- 1/2 teaspoon almond extract
- 1 1/2 cups finely ground almonds
Preheat oven to 325 degrees F. Grease an 8” square pan.
In a large saucepan, melt margarine (or butter) and chocolate over low heat, stirring until melted and remove from heat. Using a spatula or spoon, stir in sugar. Stir in the eggs and extracts and blend only until all ingredients are incorporated. Stir in ground almonds until blended.
Transfer batter to prepared pan.
Bake at 325 degrees for 35-40 minutes or until top is shiny and slightly cracked. Cool completely before cutting into pieces.
