Yogurt Cucumber Soup

Yogurt Cucumber Soup or 'Tzatziki' is a refreshing cold soup made with dairy ingredients, cucumbers, herbs and seasonings for Shauvot or any other occasion. Serve chilled and if eating
it outside on your deck or patio, serve with ice cubes. A perfect way to cool off on a hot day.
Ingredients:
- 1-32 oz. container plain yogurt (regular full or lowfat, Greek-style, goat-milk, combination of yogurt and cream - your favorite type is fine)
- 1 tsp. salt (use less if you use salted cheese)
- 1 tbsp. grated orange zest
- 3-4 cloves garlic, minced (adjust quantity to taste, about 2 tsp.)
- 1/2 cup cucumbers, finely chopped
- 8 tbsp. feta cheese, crumbled
- Watercress, chopped fresh chives, mint or dill, for garnish
In a large bowl or pot, simply stir all ingredients together. Divide into individual soup bowls, dessert bowls or even parfait glasses to serve. Garnish as desired. Serve with fresh pita or Pita crisps.
