Cucumber Salad with Strawberries

<< Cucumber Salad with Strawberries is a refreshing summer salad that can be prepared in minutes. Strawberries are currently in season and enhance this tangy dish. Fresh orange segments, pomegranate seeds, sliced kiwis, blackberries and mango slices could be substituted. To make things easier, slice and refrigerate the cucumbers ahead of time until you are ready to assemble and serve the salad.


Ingredients:

  • 3 cups thinly sliced English cucumbers
  • 1 cup strawberries, hulled and halved
  • ½ cup thinly sliced Vidalia onions, optional
  • ¼ cup vinegar (cider, wine, white, not too strong) or lemon juice
  • 2 tbsp. oil
  • 2 tsp. sugar
  • 2 tsp. chopped basil, if desired
  • Salt and black pepper, to taste
Place cucumbers, strawberries and onions (if using) in a salad bowl. In a separate bowl, mix the vinegar, oil, sugar and basil together. Add to the cucumber mixture and toss lightly to coat. Add salt and pepper, to taste. Let stand for no more than 10-15 minutes before serving. Toss lightly as you serve - a lot of the juices will seep to the bottom of the salad bowl.

Serves: 4, as a side salad or appetizer
