Creamy Strawberry Mousse

<< Creamy Strawberry Mousse is a refreshing dessert recipe that is rich and flavorful. Keep a batch in the fridge over Passover and serve it in a parfait glass garnished with fresh berries, cookies or in a tall glass mixed with sponge cake and chocolate shavings.

Ingredients for Creamy Strawberry Mousse:

  • 1 pkg. strawberry gelatin
  • ¼ cup sugar
  • ¾ cup boiling water
  • ¼ cup orange juice
  • Zest of ½ orange (optional)
  • 1 pint strawberries
  • 1 cup heavy cream

Combine gelatin and sugar in a mixing bowl. Add boiling water and stir until particles are dissolved. Add orange juice and zest to gelatin. Chill this mixture until it has thickened to the consistency of an egg white.

Once gelatin mixture has thickened, coarsely chop the strawberries. In a separate bowl, lightly whip the cream until it has thickened. Fold in strawberries and cream to the chilled gelatin mixture. Pour into a 5-cup mold, cover and freeze until firm, at least overnight. You can unmold the mousse and serve or spoon it out into parfait glasses with fresh fruit garnish.
