Crab Salad

Crab Salad is a salad recipe that has nothing to do with real crab meat - buy the imitation crabmeat in the
kosher section of your supermarket. It is made with Pollock and other whitefish.
Ingredients for a light oil-based salad:
- 1 package imitation crab meat (approx. 8-10 oz.)
- 2 tbsp. oil
- 1 tbsp. lemon juice
- 1 stalk celery, very finely chopped
- 1/2 tsp. parsley
- 1/8 tsp. garlic powder
- Salt and pepper, to taste
Ingredients for a mayonnaise-based dressing:
- 1 package imitation crab meat (approx. 8-10 oz.)
- 1/3 cup mayonnaise
- 1/8 tsp. garlic powder
- 1 stalk celery, very finely chopped
- 1 tbsp. finely chopped chives or green onions
- Salt and pepper, to taste
You can purchase imitation crabmeat in a shredded form or as a solid piece. If it is solid, you may grate it coarsely to obtain a good salad texture. Once the crabmeat is shredded, combine all ingredients in a mixing bowl and
blend well. That's all it takes!
Use Crab Salad as a topping for your salad, as a sandwich filling or
as a stuffing for a wrap or panini sandwich.
Feel free to add some of these ingredients to the
recipes above (remember to keep ingredients finely chopped):
- Sundried tomatoes
- cucumbers
- peppers
- finely chopped nuts
- raisins
- sunflower seeds
- flax seeds
- lemon zest
- shredded pineapple
