Couscous Salad

<< Couscous Salad is a fresh and easy salad recipe. It works well as a lunch salad together with a grilled chicken breast or a piece of cooked fish. As a snack, it is a delicious way to fend off hunger; at the same time, it satisfies many daily nutritional requirements. Feel free to add other chopped vegetables or fruits that you like in addition to your favorite herbs and spices.


Ingredients for Couscous Salad:

  • 1 cup couscous, uncooked
  • 2 cups diced tomatoes (use fresh or canned, drained)
  • 2 cups diced cucumbers
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 2 tbsp. chopped basil (2 tsp. dried basil)
  • 2 tbsp. chopped fresh Italian parsley (2 tsp. dried parsley)
  • 1 tbsp. chopped fresh mint (1 tsp. dried mint)
  • 1/2 tsp. Kosher salt (or regular)
  • 1/4 tsp. black pepper
Prepare couscous according to package directions. Set aside until it has cooled off. Combine drained tomatoes, cucumber, lemon juice, olive oil, basil, parsley, mint, salt and pepper in medium bowl. Add cooled couscous; toss to combine. Makes approximately 6 cups.
