Chocolate Cake - Pareve

<< Most of us love and crave chocolate cake. Here is an easy recipe for pareve cake recipe made with oil. It can be baked in a tube pan or large baking dish. It is a moist cake that tastes great without frosting. If you want, you may dust the top with icing sugar.

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 eggs
  • 1/2 cup oil
  • 1 tsp. vanilla
  • 1 cup brewed coffee, cooled
  • 1 cup cocoa (pareve)(add 1 cup boiling water to the cocoa)

Preheat oven to 350 degrees F. Generously grease a tube pan or 9" x 13" baking dish.

Combine flour, sugar, baking powder and baking soda in a large bowl. Add eggs, oil and vanilla and cooled coffee, one ingredient at a time, beating well after each addition. Beat in cocoa mixture until incorporated - batter will be thin and smooth. Pour batter into prepared pan.

Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Invert tube pan cake after 15-20 minutes and let cool.

If desired, top cooled cake with sifted icing sugar.
