Chocolate Honey Cake

<< Chocolate Honey Cake is an easy cake recipe baked in a tube pan or 9” loaf pan. Serve this delicious pareve cake at the High Holidays or as a light dessert or snack anytime.

  • 2 eggs
  • 1 cup sugar
  • ½ cup plus 1 tbsp. oil
  • ¾ cup honey (dark, if possible)
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 heaping tbsp. cocoa
  • 1 cup strong brewed coffee, cooled
Beat eggs and sugar until fluffy. Add oil followed by the honey.

Sift the flour, baking soda, cinnamon and cocoa together in a separate bowl. Beat in dry ingredients to the egg/honey mixture alternating with the cup of coffee.

Line the baking pan with parchment paper at the bottom and lightly grease or spray the sides of the pan.

Bake at 325°F for 1 hour and 10 minutes using centre rack of oven – cake bakes slowly – you may check to see if cake is done after one hour – place toothpick in centre of cake and once if comes out dry, cake is ready. You can also touch centre of cake where it ‘breaks’ – centre should be dry, not wet to the touch.
