Chocolate Dipped Strawberries

Chocolate Dipped Strawberries are easy to make for an elegant and delicious dessert at Passover. In addition to strawberries, you can also dip dried fruits and large nuts in melted chocolate. The berries are an elegant dessert by themselves and also make a beautiful garnish for Passover cakes and frozen desserts.
Ingredients:
- strawberries, intact and untrimmed with green tops – 15 large or 20 medium
- 8 oz. Passover chocolate chips
(I like to use a lot because quite a bit sticks to the pan)
Make the strawberries on the day that you will serve them.
You will need to cover a large baking sheet with parchment or wax paper.
To melt the chocolate, you can either use the microwave, a small saucepan on the stove or a double-boiler. In the microwave, melt chips in a microwave-safe bowl using a low power setting. Microwave for about 3 minutes or so, more or less if needed, checking after one minute increments. Stir a bit each time.
On the stove, place chips in a saucepan on low heat, stirring occasionally until melted and smooth. Do not allow any water to contact the chocolate. If using a double boiler, place chocolate on top of pot of simmering water, until melted.
Once the chocolate has melted, use your hands or a fork to pick up each strawberry and dip into the chocolate – you can coat the entire strawberry or only the bottom half. Once dipped, twirl the strawberry around to allow excess chocolate to drip off. Place on parchment or wax paper-lined baking sheet.
Let the strawberries cool off - the chocolate will harden as they sit on the baking sheet. Serve in a few hours. If desired, place entire baking sheet in the fridge and later on, transfer strawberries to a serving platter.
