Chocolate Covered Bananas
Chocolate Covered Bananas are simple to prepare and can be stored in the freezer until ready to use. This healthy, no-bake dessert recipe is a nutritious alternative
to high fat, sugary candies and chocolates.
Note: adjust the quantities as you need them - I prefer to use
more rather than less chocolate and peanut butter - any leftover sauce can be used to coat strawberries, orange sections, pineapple slices or large marshmallows.
Ingredients:
- 3 medium firm bananas, not overly ripe
- 8 oz. semi-sweet chocolate chips
- 2 tbsp. creamy peanut butter
- 8 oz. chopped, toasted nuts
Slice the bananas into 4-6 pieces each. Place on a pan and freeze for 45 minutes, or until firm.
To prepare this recipe, melt the chocolate chips
over low heat in a saucepan and slowly stir in the peanut butter until mixture is smooth. Place toasted nuts in a
separate shallow bowl or dish. Remove chocolate mixture from heat. Roll each piece of chilled banana in the chocolate mixture, then in the
nuts until completely coated.
Place each piece of coated banana back onto the pan and return to the freezer until the chocolate firms up and
the bananas are cold. Store finished banana pieces in a plastic bag in the freezer.
