Chocolate Cookies

Chocolate Cookies are a real treat for true chocolate lovers - this easy cookie recipe can be prepared as dairy or pareve yielding a large batch of moist cookies. Note that the preparation is messy - wear an apron or crummy t-shirt. It is important to resist the temptation to overbake the cookies.
Chocolate Cookies continue to bake for a couple of minutes even when they come out of the oven - remove from oven when cookie edges are set and small cracks appear toward the centre.
This way, baked cookies will be moist and chewy.
Ingredients:
- 3/4 cup butter or pareve margarine
- 4 squares unsweetened baking chocolate (1 oz. each)
- 2 cups white sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa
- 4 eggs
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 cups semi-sweet chocolate chips
- Confectioner's sugar - to sift over baked cookies, optional
Melt butter and baking chocolate in saucepan over low heat, stirring until smooth, for about 5 minutes. Set aside for 15-20 minutes.
Combine melted & cooled chocolate mixture, sugar, 1 cup only of the flour, cocoa, eggs, baking powder and salt in large bowl.
Beat at medium speed until all ingredients are well-blended. Stir in remaining flour by hand plus all of the chocolate chips.
Cover the bowl and refrigerate for at least 2 hours.
Heat oven to 350°F. Form tablespoonfuls of dough into balls
and place 2" apart on ungreased cookie sheets. Bake for 7 to 10 minutes - until edges are set and cookies begin to crack on top.
Remove from oven and only remove from cookie sheet after 2 minutes. Cool completely.
Makes 4-5 dozen cookies.
