Chocolate Brownies - Fudgy and Moist

Chocolate Brownies are simply delicious. They taste great with a bit of icing sugar dusted over the top or just plain. This brownie recipe comes from a lot of experimentation following advice from many excellent baking websites, cookbooks, product recipes. I prefer to use hard chocolate rather than cocoa powder because the flavor is more pronounced in the finished product.

Ingredients:

  • 4 squares unsweetened chocolate
  • 3/4 cup butter or pareve margarine
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 3/4 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Preheat oven to 350 degrees F. Grease an 8" or 9" sqaure baking pan. You will prepare batter in the saucepan that is used to melt the chocolate.

Melt chocolate and butter (or margarine) over low heat in a medium-sized saucepan and stir until chocolate is melted and ingredients are smooth. Remove from heat immediately and let cool for a couple of minutes.

Using a whisk or hand mixer on low speed, lightly beat in sugar to the slightly cooled chocolate in the saucepan. Add the eggs and vanilla, beating ingredients until smooth. Stir in the flour, baking powder and salt, mixing until they are blended. Stir in chocolate chips and walnuts. Pour fudge brownie batter into prepared pan.

Bake for 35 minutes. Sides will be more cooked than middle which should be set, not firm. Remove from oven once brownies are set, even if middle seems less "done" than the sides.

Cut into squares once completely cooled.
