Chickpea Salad in Vinaigrette Dressing

Chickpea Salad is a healthy salad recipe for all occasions - as an appetizer, side salad or light meal. Substitutions can be made to include your favorite herbs and spices. This dish makes a handy meal for vegetarians due to the fact that chickpeas have a high protein content.
Ingredients:
- 2 cans chickpeas or 'garbanzo beans' (19 oz. each), drained
- 2 tomatoes, peeled, seeded and diced (or a small can of diced tomatoes, drained)
- 1/4 cup diced green or red pepper
- 1/4 cup finely chopped red onion
- 1/4 cup black olives, pitted and chopped
- 1 clove garlic, minced
- 1/4 cup chopped parsley
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup oil
- 1 tbsp. red wine vinegar
- 1 tbsp. lemon juice
Combine all ingredients and refrigerate for 3-4 hours.
Serves: 8-10
