Cheese Blintzes with Cinnamon Raisin Filling

Cheese Blintzes are a brunch recipe that please most dairy-lovers. They are easy to prepare and can be made ahead of time and warmed up in the oven.
Ingredients for Batter:
- 2 cups flour
- 4 eggs
- 2 tbsp. sugar
- 1 tsp. salt
- 2 cups milk
- 1/2 cup oil
- oil, for frying
Place all ingredients in food processor or blender and process until smooth for 15 seconds. Heat oil in crepe pan over medium-high heat. Pour small amount of batter into hot pan, just enough
to cover the bottom and brown on one side. Turn over and and lightly brown on other side. Turn onto a plate. Repeat until
you have used up the batter. You will make 12-15 crepes.
Ingredients for Filling:
- 1 1/2 lbs. dry cottage cheese
- 1/2 cup icing sugar
- 1 egg yolk
- Grated zest of 1/2 lemon
- 1/2 cup raisins, if desired
- Cinnamon, if desired
Place all ingredients, except for raisins, in food processor or
blender and process until combined, about 10-15 seconds.
Mix in the raisins.
Using a tablespoon, place filling along one side of crepe. Roll
up crepe and tuck in sides as you fold to seal in the filling.
If desired, you may sprinkle sugar and cinnamon over top of
blintzes.
Warm up prepared blintzes in 300 degree F oven for 15 minutes.
Serve with sour cream or plain yogurt, fresh fruit and preserves.
Yield: 12-15
