Cauliflower Latkes: Baked or Fried

Cauliflower Latkes will make you forget potato latkes. You can either fry the latkes or bake them in the oven. They make a terrific side dish or appetizer recipe, especially at Chanukah. The food odors associated with fried potato latkes are noticeably reduced when preparing this recipe.
Ingredients:
- 2 eggs
- 1 medium onion, chopped
- 1/2 cup grated carrots (1 medium carrot)
- 1 head of cauliflower, boiled, drained and cooled or 2 lbs. of frozen cauliflower, thawed and drained
- 2 tbsp. flour or matzo meal
- 1/8 tsp. onion powder
- 1/8 tsp. garlic powder
- Salt and pepper to taste
- 2-3 tbsp. oil, for frying or for baking dish
Combine all ingredients, except for oil, in food processor and pulse until all ingredients are combined.
Do not overprocess or mixture will become too much of a paste. You may also mix ingredients in a bowl by hand, mashing the cauliflower and other ingredients until well blended.
To fry: Heat oil in a large skillet to medium high. Once oil is hot, add batter by tablespoonsfuls (teaspoonfuls for appetizers) Brown each cauliflower latke for 2-3 minutes per side until golden brown. Remove latkes to paper towels where they can drain for few minutes as they cool down.
To bake: Place oil in a small bowl. Using a pastry brush, dab oil on baking sheet in each spot where you will place latke batter. Cover each oiled spot with a spoonful of cauliflower latke batter. Bake latkes at 400 degrees F for 5-7 minutes. Remove from oven, re-paint
baking sheet and turn latkes onto the other side. Return to oven and bake for another 5-7 minutes or until golden brown.
If you wish, prepare cauliflower latkes ahead of time and re-heat them in the oven at 350°F for 10-15 minutes.
