Carrot Raisin Salad - Sweet and Spicy!

<< Carrot Raisin Salad is a colorful, nutritious salad recipe that can be prepared in a matter of minutes. The blend of sweet carrots and raisins combined with a spicy dressing makes this a flavorful, interesting dish. If one of the spices is not to your liking, leave it out.


Ingredients:

  • 3 - 3 1/2 cups sliced carrots, cut diagonally
  • 2 tbsp. lemon juice, fresh is best
  • 1 tsp. sugar
  • 1/2 tsp. paprika
  • 1/4 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 1 tbsp. olive oil
  • 1/4 cup minced parsley
  • 1 cup raisins
  • Large lettuce leaves, to serve
Slice carrots and cook them in boiling water until crisp-tender; this will take up to five minutes.

Rinse and drain using cold water. Let carrots cool off in bowl while you prepare dressing.

In a small bowl or cup, mix lemon juice together with sugar, paprika, cumin, cinnamon, salt, and cayenne pepper, stirring until ingredients are dissolved. Stir in olive oil, parsley, and raisins to dressing.

Add dressing to carrots and toss until coated.

Cover and refrigerate at least one hour until chilled.

Toss and serve from bowl or over a bed of lettuce leaves, if desired. Makes: 6 servings
