Caramelized Almond Wafers

<< Caramelized Almond Wafers - I tried this recipe tonight after reading it today in an article appearing in the National Post by Bonnie Stern. The wafers remind me of Florentine cookies because they are flat, crunchy, sweet and very attractive. One batch took less than five minutes to prepare and less than 30 minutes to bake and cool. Healthy, lowfat and very pretty Passover cookies - try this recipe and you will be hooked.

Ingredients:

  • 2 egg whites (I used 3 egg whites)
  • ½ cup sugar
  • ½ tsp. pure vanilla extract, optional
  • 3 cups sliced almonds
In a large bowl, mix (do not beat) egg whites with sugar. Add vanilla, if using and stir in the almonds. Using a tablespoon, make mounds on prepared cookie sheet and flatten them into thin round wafers with your fingers (dipped in cold water) or the back of a spoon.

Bake for 20 minutes (I recommend the top or middle rack of the oven) - turn off oven and leave cookies inside for additional 10 minutes, with door open.

Note: I removed the cookies after only a couple of minutes once they were baked - make sure to remove them from cookie sheet while they are still hot or warm so that there is no problem of sticking or breaking.

Yield: up to 20 cookies
