Cabbage Soup - A Meal in a Bowl!

Cabbage Soup is a traditional dish served in many Jewish homes. It is sometimes referred to as a 'borscht' - this particular vegetable beef 'borscht' makes a healthy and satisfying meal. If you are trying to lose weight, this recipe can be helpful - after a bowl of borscht, you should be somewhat, if not completely, full.

Ingredients:

  • 2-3 lbs. flanken or brisket
  • 2 tbsp. oil
  • 2 onions, chopped
  • 2 large 28 oz. cans crushed or diced tomatoes, reserve liquid
  • 3-4 cups water
  • 1-2 tsp. salt
  • 2 tbsp. lemon juice
  • 1/4 cups sugar
  • ½ tsp. pepper
  • 1 large cabbage, coarsely chopped

Remove most of the visible fat from the beef - boil it whole or slice into pieces, if desired.

In a large soup pot or dutch oven, heat oil over medium heat. Add onions and stir until translucent. Stir in the tomatoes with the juice and add water. Add the cabbage and rest of the ingredients. Cover and simmer for an hour and a half.

Check soup for taste and add additional seasonings to taste.

Remove meat from the pot and cut it into bite-sized pieces. Return it to the pot and serve the soup hot.

This soup is delicious plain and can be served with egg noodles or rice. It is a hearty start to any meal or a meal in itself. Enjoy!
