I have to confess, some of the best Brownie Recipes are not always made from scratch; they may come from a box namely, Ghirardelli Triple Chocolate Brownies. Notably, this brand is Kof-K Kosher Dairy, can be purchased in the single size or in the club pack 3-pouch size at Costco and other big box stores. In each of the following Brownie Recipes, preparation is not labor intensive and the results are sublime. Check out the fabulous recipes below - nice enough to serve company. Remember to remove brownies from the oven when a toothpick inserted in the centre comes out dry - avoid overbaking. Follow package directions for best results.

To make Turtle Brownies, I used two pouches of the mix in a 9 x 13" pan this afternoon, adding 1 cup of chopped soft caramels (avoid the hard ones - they mess up the recipe) plus 1 cup of chopped pecans to the mix. In addition, I replaced 2/3 cup oil (as directed on the package for 2 pouches) with 1/3 cup oil plus 1/3 cup melted butter. The brownies came out moist and irresistable.
For Almond Latte Brownies, you will need the following ingredients:
- 1 package or pouch Ghirardelli Double Chocolate
Brownie Mix
- 1/3 cup water
- 1/3 cup vegetable oil
- 1 egg
- 1/2 cup sliced almonds, divided
- 2 teaspoons instant coffee crystals
- 1 cup (8 oz) cream cheese, softened
- 1/4 cup (1/2 stick) butter, softened
- 1 cup powdered sugar
- 1 cup chocolate chips
- 1 teaspoon vegetable oil
Preheat oven to 325°F. Blend mix, water, oil, egg and 1/4 cup almonds until moistened. Spoon into lightly greased 8x8-inch pan. Bake 40-45 minutes. Cool thoroughly. Dissolve coffee crystals in 1 1/2 tsp. hot water. Set aside. Using an electric mixer, beat cream cheese and butter until fluffy. Add sugar and coffee mixture. Beat until smooth. Spread over cooled brownie. Chill. Melt chocolate chips with oil in microwave 2-3 minutes at 50% power, stirring occasionally. Spread over latte icing. Sprinkle with remaining 1/4 cup almonds.
Makes 16 brownies.
Ingredients for Seven Layer Brownie Bars:
- 1/2 cup (1 stick) butter, melted
- 1 package or pouch Ghirardelli Double Chocolate Brownie Mix
- 1 cup shredded coconut
- 1 cup butterscotch chips
- 1 cup semisweet chocolate chips
- 1 cup chopped pecans
- 1 1/4 cups (14 oz. can) sweetened condensed milk
Preheat oven to 350°F. Pour melted butter over bottom of 13x9x2-inch pan. Sprinkle brownie mix over butter. Top with coconut, butterscotch chips, chocolate chips and pecans. Drizzle with sweetened condensed milk, stopping 1/4 inch from edge of pan.
Bake 25-30 minutes or until edges are bubbly. Cool thoroughly before cutting.
Makes 16-24 bars.
