Blondies

Blondies are an easy vanilla/caramel bar cookie recipe that can be prepared and baked in less than an hour. If you prepare Blondies ahead of time, they freeze well and can stay for days stored in an airtight container.
Serve plain, with fruit and sauce or underneath a scoop of ice cream topped with chocolate
or caramel sauce.
Ingredients:
- ½ cup melted butter
- 2 cups brown sugar
- 2 large eggs
- 2 tsp. vanilla
- 1 tsp. baking powder
- ¼ tsp. baking soda
- ¼ tsp. salt
- 2 cups flour
- 1 cup white chocolate chips
- 1 cup chopped pecans or walnuts
- if peanut-allergic, replace with 1 cup dried cranberries or other finely chopped dried fruit
Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan.
Using a hand mixer, blend the butter and brown sugar. Add eggs one at a time beating until smooth and then vanilla.
Stir in remaining ingredients mixing until incorporated.
Spread mixture into prepared pan.
Bake for 25 minutes until golden brown - do not overbake. Edges will be more cooked than centre - make sure that centre is not too raw before removing from oven. Soft is OK, not wet.
Cool and cut into bars. Store in an airtight container.
