Bean Salad

Bean Salad is a nutritious salad recipe to serve as an appetizer, side salad or light meal.
Dressing Ingredients:
- 1/4 cup vinegar
- 1/2 cup oil
- 1/4 tsp. black pepper
- 1/2 tsp. salt
- 1 tsp. dry mustard
- 1/2 tsp. powdered celery seed
- 1/2 tsp. dried thyme
- 1 tbsp. sugar
- 1 garlic clove, minced (or 1/4 tsp. garlic powder)
Mix all ingredients together.
Salad Ingredients:
- 1 cup canned or frozen cut green beans, drained and rinsed
- 1 can red kidney beans, drained and rinsed
- 1 package of frozen lima beans, thawed and drained
- 1 small onion, chopped
- 1 red pepper, chopped
- 1 cup celery, chopped
Try to chop the vegetables so that all ingredients are around the same size.
Blend the vegetables. Add dressing and toss.
Refrigerate salad for 4-5 hours allowing ingredients to marinate. Serve chilled.
