Bean Salad

Bean Salad is a nutritious salad recipe to serve as an appetizer, side salad or light meal.

Dressing Ingredients:

  • 1/4 cup vinegar
  • 1/2 cup oil
  • 1/4 tsp. black pepper
  • 1/2 tsp. salt
  • 1 tsp. dry mustard
  • 1/2 tsp. powdered celery seed
  • 1/2 tsp. dried thyme
  • 1 tbsp. sugar
  • 1 garlic clove, minced (or 1/4 tsp. garlic powder)
Mix all ingredients together.


Salad Ingredients:

  • 1 cup canned or frozen cut green beans, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1 package of frozen lima beans, thawed and drained
  • 1 small onion, chopped
  • 1 red pepper, chopped
  • 1 cup celery, chopped
Try to chop the vegetables so that all ingredients are around the same size. Blend the vegetables. Add dressing and toss.

Refrigerate salad for 4-5 hours allowing ingredients to marinate. Serve chilled.
