Baked Apples - Two Recipes: Caramel sauce, Lowfat Cinnamon Raisin

Baked Apples are an easy dessert recipe filled with great flavor and nutritional value. There are two recipes below: the first has a rich, caramel-type sauce and the second is a lower calorie version.

Ingredients for Baked Apple Recipe with Caramel Sauce:

  • 4 large, firm apples, (Royal Gala, Granny Smith, Delicious)
  • Brown sugar
  • Butter or margarine
  • Cinnamon
  • Raisins
  • 1 cup of fruit juice, water or other liquid for the pan
Cut off the top of the apple, leaving the stem intact, about 1/3" down. Hold on to each top - you will need to cover up the stuffed, cored apple before baking.

Once you have cut off tops of apples, use a good paring knife to cut out the core of the apple until 3/4 of the way through, not right through to the bottom.

Place a teaspoon containing butter as well as sugar in centre of each cored apple. Sprinkle with cinnamon, add a few raisins and then cover the exposed apple with the top of the apple that you cut off at the beginning.

Place apples in a baking dish, upright. Using a toothpick, stab each apple in 3-4 spots to let steam escape during baking. Replace top of each apple that you cut off at the beginning. Pour cup of juice or water at bottom of baking dish to keep apples moist.

Bake for 18-20 minutes at 350 degrees F. Check for doneness - don't let them overcook or they may break open and you will have applesauce, not baked apples. Cooking time depends on size of the apples and moisture. Keep an eye on them as they bake.

Remove from oven, allow apples to cool off and dig in to the apple filled with caramel sauce and raisins! See possible add-ins at end of next recipe.

Ingredients for a Lowfat Baked Apple:

  • 4 large, firm apples (Royal Gala, Granny Smith, Delicious)
  • 2 tbsp. brown sugar (you may replace sugar with your favorite sugar substitute)
  • 1-2 teaspoons cinnamon
  • 1/4 cup raisins
  • 1 cup of fruit juice, wine or water
Preheat oven to 350 degrees F.

Rinse and core the apples. Place apples in a baking dish, standing upright.

Spoon sugar and cinnamon over each apple and distribute raisins evenly.

Pour liquid over top of each apple. Poke each apple with a fork to allow steam to escape during baking.

Bake for about 18-20 minutes - check periodically for doneness. Apples should be soft and tender. Do not overbake. Baste with sweet liquid. Let apples cool and serve warm or chilled.

Possible add-in ingredients include:

  • Grated orange or lemon zest
  • Butter, a pinch added to each apple
  • Maple syrup
  • Toasted walnuts or pecans
  • Jello powder - 2 tsp. added to liquid for strong fruit flavor
