Baked French Toast

My sister-in-law Carin prepared this recipe for Baked French Toast on a few occasions when she hosted brunch for our family. Of course, there were rave reviews all around - somehow, I forgot to get the recipe from her. All I knew was that it was prepared a day ahead and remained in the fridge overnight. The blend of caramel, challah, fruits and syrup flavors were hard to forget. Recently, my friend Cheryl told me that she was preparing Overnight French Toast with Blueberries to serve on the weekend. She showed me the recipe in the fabulous cookbook "Panache", edited by Shawna Goodman-Sone - I found what I had been looking for! This brunch recipe is a keeper. Your guests will love Baked French Toast, a combination of traditional french toast and bread pudding.

Ingredients for Toast:

  • 12 thick slices of Challah or brioche
  • 1 1/2 cups fresh or frozen blueberries or raspberries

Ingredients for Caramel:

  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1 tsp. cinnamon, if desired
Bring brown sugar, butter and cinamon to a boil in a small suacepan. Stir with a wooden spoon. Boil for 2 minutes and turn off the heat. Caramel with be bubbly and thick. Drizzle caramel evenly over the bottom of a 9" x 13" baking dish. Cover with 6 slices of bread. Scatter the berries over the bread. Place the remaining 6 slices of bread over the fruit.

Ingredients for Custard:

  • 5 large eggs
  • 1 1/2 cups milk
  • 1 1/2 tsp. vanilla extract
  • 1/2 tsp. salt
Whisk together the eggs, milk, vanilla and salt in a bowl. Pour mixture evenly over the bread. Press down lightly with plastic wrap so that the bread absorbs the custard. Refrigerate overnight.

Preheat oven to 350 degrees F.

Remove wrap and bake French toast uncovered for 40-50 minutes until puffed up and golden brown.

The 'Panache' cookbook instructs you cut French Toast into squares. Invert to show the caramel and place on a serving platter.

You may also leave the dish intact, serving it in the baking dish. Guests can cut a slice of Baked French Toast, scooping up the delicious caramel from the bottom as they take a piece.

This is a very reliable and attention-grabbing dish that is sure to please everyone.
